International Salon Culinaire has been taking place for over 120 years with the first show in 1902 at the Royal Horticultural Halls. It became part of the HRC Show in 1935 (when the show was known as the Hotel and Catering Exhibition at Olympia and has continued to evolve over the years.

The HRC show itself is for anyone involved in the catering and hospitality sector, whether that be Hotels, Restaurants, Caterers, Cafes, Pubs, professional bakers, cake decorators and more. Although Chefs are a core part of the audience that visits the show, cake decorators and sugarcrafters are growing increasingly interested in this amazing trade event. The Sugarcraft display and competition has been a part of Salon since the beginning and continues to grow each year..

The competitions are open to anyone with a keen interest in cake decorating - both professional and aspiring; and there are dedicated competitions targeting juniors and students. The schedule consists of a wide variety of classes including, but not limited to, wedding cakes, table centre-piece, sugarcraft showpiece, small decorative exhibit, miniature exhibit, decorated celebration cake, novelty cake, sculpted cake, cupcakes, floral arrangement floral bouquet and floral sugarcraft on a hat.
